What's for dinner this week?

I write my menus Saturday - Friday since I shop Friday nights...

Saturday - we ended up picking up Wendy's since we were out of town shopping
Sunday - we went out to dinner for Simon's birthday after the air show
Monday - BLT salad and breadsticks
Tuesday - hot dogs and beans
Wednesday - Simon's night to cook
Thursday - kielbasa hot dish and cheesecake (Simon's request - his birthday)
Friday - fish fillets, waffle fries and coleslaw

Looking at that - I usually cook more from scratch and less convenience foods/meals out...this was not a stellar nutritional week for us.

Ours has been pretty spotty... our schedule means that lately we are all eating at different times.

I did fix taquito enchiladas for dinner on Friday and even Tevel ate several helpings. Last night was Pizza Hut (extra kids at the house). And tonight was Macayos after the choir concert...

Hmmm no wonder I need to lose weight.

With all our traveling, meal planning has been sporadic. When I cook, we usually have enough for a day or two of leftovers, a partial meal anyway. Latest was grilled BBQ chops and bratwurst,forkhook beans, baked sweet potatoes, Mac & cheeses and sliced tomatoes. We were feeding my brothers neighbor, and meal was much larger than normal.

Yesterday was steak, baked potato and a salad with lots of fresh fruit in it.

Maelyn - taquito enchiladas sounds good

Wanda - I'm going to need tips from you on downsizing my meals- with Simon leaving - we're not going to need as much food (plus he's my leftover eater - takes them for lunch)

This week's menu

Saturday - mummy dogs and jello jigglers

Sunday - baked chicken chimichangas with refried beans (this was a new recipe - and is a keeper)

Monday - potato broccoli sausage skillet (another new recipe and also a keeper)

Tuesday - ravioli

Wednesday - Simon is cooking

Thursday - chili

Friday - tilapia, rice, veggies

I need ideas that are teen pleasers, easy to warm up or serve at differing times, and are easy to fix. Preferably with low calories...

Monday -- RoseMarie Chicken
Tuesday -- probably frozen pizza as Eric will be the only one eating!
Wednesday -- hot little ham sandwiches and mac and cheese
Thursday -- Crockpot chicken
Friday -- eat with my parents since there is a football game and Emma and I won't go home after school/work
Saturday -- good question!

One thing I have been doing in 2015 is making a new recipe every month. (I know I should be making a lot more than one new recipe a month, but I don't want to stress myself out!). We have gotten some new good meals that way, one of our favorites being chicken parmesan. I am open to desserts, breakfast goods, sides, etc. I will have to continue this into 2016 as well.

Well - with the boys gone, my cooking has changed drastically. We eat a lot of salads, soup and other "light" stuff. I've gotten quite lazy.

Esme - I used to try a new recipe a week when I was cooking full steam. I found that anything "new" was received with lukewarm reviews the first time I cooked it. But a few of them made it past that trial run and are now staples. And it was a good exercise that makes me think about cooking different things to get out of ruts.

That said - I have no idea what we will eat this week.....

Everything does certainly change as the kids leave home. We find that we mostly grill, many times the entire meal. I have a wok style veggie basket that I fill with chunked and seasoned veggies and grill alongside whatever meat we're cooking. I will plan for leftovers, sometimes making fresh sides. We generally eat lighter.

Nancy, I am impressed that you tried one new recipe a week. One a month is hard enough for me! I guess I need to up my game.

Well - I tried to do one a week. usually Saturday night when I had the time to think, shop and prep. Probably really like 2-3 times a month. It got kinda fun actually.
